Day 20

Okay, I go up at 6:30 fine. Got to the school at 7:50 ready to go to the greenhouse and pick the herbs. And bloody hell, I get there and there's loads of students queuing up outside the kitchens ready to start!

Apparently this has been going on for a few weeks now. Obviously I live off-campus so I've no idea whats going on, except by looking at the face of the obviously hung over every day,. But good god. Starting at 8??? I'm not sure if they're keen or just slow.

Had another easy day today, but was really looking forward to it. I was down to cook scallops, and anyone that hass cooked scallops before that they really needed to only be cooked for 20-30 seconds each side. Over cook them, and they're rubber. But you only have to blink and they're overcooked, so I had to be careful. The boy did good though.

The Hollandaise Sauce was better today, although I must say I don't like it at all. For those that don't know, it's made out of egg yolks, butter (lots of it) and a small squeeze of lemon. Obviously a great combination for fish, but myself I like fish thats really fresh, and lightly seasoned. And obviously a bit of lemon on the side that I won't use.

Now the Creme Brulee was interesting (that's the dessert you see chefs using a blow torch with). I sparked up the blow torch and nearly set my partner on fire. Evidently you don't need to turn the gas up as much as I did. And after that I wasn't too confident to be honest. I'm not sure if everyone is like me, but say you're walking around a shop in the flower pressing department, and then you find yourself in the glass/china department instead. Well I usually freak out and have to get out of there pretty damn quick as I think I'm going to trip over and smash everything in sight. Well that was like this. I was bricking it.

I burnt the Creme Brulee.
